Low Carb Fun Dessert for Kids

My wife whipped up a treat for the kids today that was a big hit.  She cut up watermelon into bite sized pieces and squirted lime juice over the fruit.  She then stuck a plastic fork into the each piece.  Spread out over a tupperware lid and freeze.  Be sure to keep them seperate so they don’t stick together.  The kids loved them.  Watermelon popsicles! Other fruits that would work well: sliced grapes, pineapple, pear and mango.

    Frozen watermelon in the blender is good too. Both of my kids like that. It really cools them off in the summer:)

    Isn’t it true that watermelon has about the same glycemic index and load as whole wheat bread? http://www.mendosa.com/gilists.htm

    • How do we calculate glycemic load? By using weight of the food. Watermelon is MUCH less dense the bread. I think I read somewhere watermelon is 90% water? Bread is about 33% water. In the above recipe we use a 1.5 inch cubed piece of watermelon. If you wanted to substitute with a pinch of bread, that would be equivalent. Don’t forget all the other problems with wheat bread: lectin inflammation, leaky gut, binding to the leptin receptor, binding to the opiate receptor, etc.
