Grass-Fed Beef Snack Sticks!

Beef snack sticks (i.e. “Slim Jims”) are an extremely popular quick snack in our house. They make me happy because of the (essentially) zero glycemic index and our kids really enjoy them. So I was pleased to find there are versions of this wonderful snack that are more paleo-friendly. In other words, no added synthetics, wheat, sugar, or HFCS. I ordered a box of “Chomps Beef Sticks” recently. We went through the box fairly quickly and I’ve started recommending these to patients now!

    I was diagnosed with this in 2009 and I found so little information on it that I created, at least as far as I know, the only website in world dedicated to this topic. I also work with DPAC as part of their research group.

    Rather more to the point, is that I’m a low carber. This type of diabetes is infamous for going into a type of remission, if carbs are significantly reduced and much against the advice of everyone – this is what I did. My A1c now hovers in the high fours to low fives. This is without medication.

    I really have not studied this diet much. As far as I could see, it was the only prudent choice so I didn’t give it that much thought. I have since had a change of heart mostly due to watching so many people be diagnosed with diabetes. As part of this, I’ve been reading up on the science of the diet and finally I’m reading the book by Volek and Phinney. I’ve read their scientific work but, for the most part, it was about proving the efficacy of this diet and really didn’t get into the nuts and bolts of being on such a diet.

    I was trying to find more information on a meter that would read beta-hydroxybutirate and fell across the increased need for sodium, which I probably don’t come close to filling. “Hmmm”, I thought, maybe I should check out a doc who knows a bit more about this. So I took their advice and looked up Jimmy Moore to see if there was a near me. Guess what? It’s you.

    I live down the street from Sparrow. At sixty, however, I’m long passed the need for pediatrics. Still it is nice to know that I’ve got a like mind on this subject in the area.

    PS You should try going up 127 to that place that does all kinds of jerky. Pick up a bunch since it lasts forever.
