Smoooooothies!

We have talked before about making smoothies.  There are a lot of options:  with or without dairy (we often add creamer as well — you can use regular, soy, almond or coconut milk) ; use your favorite fruit; add some whey protein if you want.  Here is a great recipe for those who cannot tolerate dairy or want dairy free.  Search the net for thousands of smoothie recipes.  Great for beating the heat and getting healthy nutrition!

Baked Avocado with Egg — So Flavorsome!

Check this one out!  When we are in a hurry we will simply slice the avacado, take out the pit and put a hardboiled egg in (we hardboil a bunch of eggs and that will last us for a few days).  Try it!

This recipe uses almond flour but you could substitute coconut flour.  Save for a quick treat.

I have my own recipe board at the office near the break room.  I will hang one of my favorite recipes and make photo copies for people.  About 6 months ago, I put up a portobello burger idea similar to this one.  Since then, one of our employees tells me that she is now addicted the portobello! I am happy because I would rather she use this than the carbs!  Yeah!

Peanut Butter/Almond Butter Protein Balls – Quick for on the Go

These are great for on the go.  Consider substituting almond butter for peanut butter (If you have not tried almond butter yet with your child, I would buy 2 or 3 brands and have them taste test to find their favorite).  Here is Laura Dolson’s recipe.  Roll in coconut flakes.

Rolled Fruit Leathers

One of our pediatric nurses made the “Rolled Fruit Leathers” recipe from Eat Like a Dinosaur (did I mention that it is one of my favorite cookbooks?) and brought them in for us to try.  Made from nectarines, cherries, water and almond extract.  They were fabulous.  Good to take on the go.  Buy the book to get the recipe!
