Staying with the “back to school” theme for a little bit, I have another great bread recipe I want to pass along. We did try Jeff Nimoy’s recipe and it was a hit – to be utilized frequently in the future for sure. Here is a fabulous looking coconut butter bread recipe from Dana Carpender. This is a nice option for your carb-sensitive child. Only 2 grams of carb per slice. As she mentions, there is some room to play around with some of the ingredients. Don’t misunderstand, however, in our most carb sensitive children, no bread or minimal bread is still the better option!
